Super quick baked feta (airfryer or oven)

Baking the feta seems to totally transform it into a rich creamy cheese, quite different from the crumbly, almost sour flavour that it normally is.

This is so easy to do, so it is perfect for a quick lunch but it really is so delicious that it is perfect to make if you are entertaining. I love it with a crunchy green salad.

INGREDIENTS

80g feta

25g baby tomatoes chopped

1-2 garlic cloves, sliced thinly or garlic purée

1/2 teaspoon of tomato purée

30g sliced red onions

1 teaspoon of capers

1/2 tbsp extra virgin olive oil

a pinch of chilli flakes

salt and pepper

INSTRUCTIONS

Put the feta in some silver foil (enough to make a parcel) with the red onion, tomato, tomato purée, garlic, capers, chilli flakes and oil. Wrap into a parcel.

Pop the parcel in to a preheated airfryer at 170* (if oven, I suggest 180*) for 7 minutes. That’s it!! So easy.

Serve with salad of your choice and an extra virgin olive oil/apple cider vinegar dressing, personally I think this goes especially well with a crunchy green salad.
