  • Ottolenghi - Lentils with Tomatoes and Gorgonzola

    This is the most delicious salad, a meal in itself. I always cook my lentils but if you are in a hurry the packs of ready made lentils work perfetly. The tomatoes take just minutes in the airfryer and the onions only need about 5 - 10 minutes sitting in the vinegar (You can keep a jar of red onions in the fridge but I never do as my fridge is too full!). I have also had this with goat’s cheese which works equally well, not as sharp and I did add some crispy bits of pancetta (the precut cubes are quick to cook and so useful to have in the freezer). Such a great lunch and it really can come together in minutes.

    My lovely friend Katharine introduced me to this recipe. A most delicious combination of flavours, using spices and herbs, which work perfectly with the crunch grated salad. The goats cheese is the perfect compliment to it.

    Be careful not to get addicted to this salad as it is so good. This salad is not only excellent with cheese but is very good with meat, particularly pork and chicken and is also the perfect foil to smoked mackerel. If you want to bulk the salad up a bit, grate an apple in with the beetroot and carrot.

  • Ottolenghi seeded chicken flatties

    Ottolenghi - Spiced, seeded chicken schnitzel

    So simple and loved from toddlers to grandparents. I suppose it is a posh version of chicken nuggets, the seeds and the spices take the very boring nugget to a whole new level. I use gram flour instead of plain flour and rye breadcrumbs instead of panko breadcrumbs, everyone still loves them.

    This would work brilliantly with pork too.

    I normally serve it with buttered new potatoes, a tomato and red onion salad and a simple green salad. Perfect.
