Quick meals for hungry kids

I have listed some ideas for quick meals for hungry kids (or adults). These recipes are perfect for making a quick hot lunch or supper - perfect for uni kids or people working from home that want to eat unprocessed food but do not have much time.

*Some of these recipes require some advanced prep but this can be done in batches so you make 5 meals in the time it takes to make 1 meal.

Freezer Chicken Fajitas - perfect for batch cooking

Freezer meals are a total life saver, and freezer chicken fajitas just might be our favorite of all. With just a few ingredients, and minimal prep, they’re one of our best back-pocket dinners.

Spicy Korean Gochujang Noodles

These spicy Korean Gochujang noodles are so easy to make, saucy, spicy yet sweet and perfect for a simple 10 minute meal. Served with ground meat of choice such as beef, turkey or chicken for a simple and protein packed recipe.

It is possible to portion the mince and the sauce and freeze so it is even quicker to make.

Ingredients for 1 person

200g pound ground beef, turkey or chicken

1 serving of easy cook noodles

30g tamari

20g gochujang paste

1 tablespoon coconut cream

1 teaspoon tomato paste

1 tablespoon water

1/2 tablespoon honey

1/2 tablespoon sesame oil

1/2 tablespoon rice vinegar

1 teaspoon garlic purée

1/2 teaspoon ginger purée

Instructions

Cook the mince in the oil, breaking it up with a spoon so there are no lumps. Place the mince in a bowl to one side.

Add all the other ingredients to a jamjar and shake well.

Next add the noodles to the pan and heat for a minute. After a minute add the sauce from the jamjar to the pan and heat over a high heat for one minute, stirring all the time. Finally add the meat back into the pan and stir for another minute.

Serve and enjoy.
