Breakfast muffins

These are absolutely delicious if you want egg for breakfast but like something a little sweet. They can be frozen and taken out of the freezer the night before and heated in an oven or airfryer.

Low carb breakfast muffins

INGREDIENTS

1 apple, grated

1 carrot, grated

2 eggs

1/2 teaspoon of vanilla powder

1/2 teaspoon of cinnamon

1/2 teaspoon of grated nutmeg

salt and pepper

INSTRUCTIONS

Combine all the ingredients in a bowl.

Divide between 4 silicone cupcake moulds.

Airfry/bake for 10 mins at 180*

Then turn heat to 200* for another 2 minutes.

Finally, take out of moulds and turn upside down and cook at 200* for 2 mins. Enjoy.
