Egg Fried ‘Rice’

This is the easiest dish ever and absolutely delicious. You will not miss real rice I promise.

INGREDIENTS

1 egg, whisked in a cup

1 fried egg

90g grated cauliflower

20g chopped onion

20g chopped kale

2 garlic cloves, crushed

1 teaspoon grated ginger

pinch of chilli flakes

1 tablespoon extra virgin olive oil

1 tablespoon tamari

lots of chopped coriander

INSTRUCTIONS

Over a medium heat soften the onion in the extra virgin olive oil. Once soft add the garlic, ginger, chilli, as well as the cauliflower rice and kale. Cook over a medium heat with a lid on for a couple of mins. This slightly steams the vegetables.

Next add the tamari and, with the lid off, stir the cauliflower mix until it begins to brown slightly and becomes less wet. Then add the egg mix and cook for a couple more mins, so it scrambles and coats the ‘rice’. Finally, add the chopped coriander.

Serve on a warm plate with a fried egg on top.

I add sesame seeds as I love them but that is an optional extra!
