Ginger spiced cherries
This is the most delicious breakfast. Quick to make especially if you freeze the freshly grated ginger before. The mix of pumpkin spice and ginger elevates the cherries making them michelin starred. Serve with toasted walnuts or seeds.
INGREDIENTS
110g frozen cherries
1/2 teaspoon of freshly grated ginger
1/2 - 1 teaspoon of pumkin spice mix
*I freeze the ginger and spice to make life easier
30ml water
INSTRUCTIONS
Pop the cherries in the pan with the ginger and the spices. Put a lid on the pan and cook on a high heat so the cherries start to soften. I shake the pan an bit with the lid on to make sure the ginger and spices coat each cherry. Then take the lid off and let any excess liquid evaporate, leaving a sticky, silky syrup. Serve the cherries with nuts/seeds and season with salt and pepper - I know it sounds weird… trust me on this one. Enjoy.
