Salmon Sushi

This is so easy and can really use any fish but I love salmon. You can use poached salmon, smoked salmon, smoked mackerel or tuna. I use sushi grade salmon in this recipe as I love it but if you are nervous of raw fish then use one of the other options.

INGREDIENTS

130g sushi grade almon fillet, cooked if you prefer

50g cauliflower, grated

50g avocado

30g sliced pepper/cucumber

1 tablespoon apple cider vinegar

Nori sheet

Tamari (optional)

INSTRUCTIONS

Mix the grated cauliflower, apple cider vinegar and avocado together to make a mush.

Spread the mix onto your nori sheet.

Slice the salmon lengthways.

Lay the salmon and the vegetables along the top edge of the nori and roll.

Serve with tamari if you like.
