Cauliflower and Butternut Squash Pakoras

These are addictively good. Quick to make as you whizz everything in a blender and then just add the vegetables, combine and fry. Job done! Serve with salad or a salsa.

INGREDIENTS & INSTRUCTIONS
50g gram flour
1/4 teaspoon turmeric
1/4 teaspoon coriander powder
Pinch of chilli powder
1/2 teaspoon cumin
Salt and pepper
1 garlic glove crushed
Small knob of ginger grated

Blend all the above ingredients with 60ml of water.


Finely slice 20g red onion
Grate 50g of butternut squash (the chunkier the better)
Break 60g cauliflower into small florets
Mix the vegetables with the pakora batter


Fry on a medium heat (in 1 tablespoon of EVOO) until crispy on both sides.


I had mine with 60g of houmous mixed with lemon juice and mint. Delicious!
