Stovetop Baked Feta

Super easy as it is all in one pan. Honestly, this tastes like pizza… happiness in one pan.

INGREDIENTS

80g feta

40g red onion

60g red pepper

1 tablespoon of extra virgin olive oil

1 teaspoon of tomato purée

a couple of baby tomatoes

a pinch of chilli

half a teaspoon of paprika

60ml water

Pinch of oregano

Freshly chopped basil

INSTRUCTIONS

Heat the pan (I use a Staub pan as it can go from stove to table).

Add the vegetables to the pan with the oil, tomato purée, chilli and paprika. Cook with a lid on the pan until the vegetables have started to soften.

Next add the feta, I broke it into rough cubes. Sprinkle on some oregano. Again, put the lid on the pan so the feta gets warmed through.

After a few minutes when you can see the feta is starting to soften and ‘melt’ take the lid off and let any excess liquid evaporate. Top with some chopped basil and serve.
