Chicken with fried cauliflower rice

This is delicious and so quick to make, especially the day after a roast chicken. My kids love it too, especially as I add bacon to theirs.

INGREDIENTS

120g cooked chicken

90g grated cauliflower

20g chopped onion

20g chopped kale

2 garlic cloves, crushed

1 tsp grated ginger

pinch of chilli flakes

1 tbsp of extra virgin olive oil

1 tbsp of tamari

lots of chopped coriander

INSTRUCTIONS

Over a medium heat soften the onion in the extra virgin olive oil. Once soft add the garlic, ginger, chill, as well as the cauliflower rice and kale. Cook over a medium heat with a lid on for a couple of minutes. This slightly steams the vegetables.

Next add the tamari and, with the lid off, stir the cauliflower mix until it begins to brown slightly and becomes less wet. Then add the chicken and cook for a couple more mins. Finally, add the chopped coriander.

Serve in a prewarmed bowl.
