Ispanakli Yumurta : Turkish spinach & eggs

This delicious recipe for ispanakli yumurta is so easy and delicous and can me made in minutes. My whole family loves it, It is especially good if you have some bread to mop up the juices.

INGREDIENTS

2 eggs

80g spinach

45g onion, chopped finely

1 tbsp extra virgin olive oil

1 teaspoon of tomato purée

1/2 teaspoon of sweet paprika

1/4-1/2 teaspoon chilli flakes

100ml water

salt and pepper

INSTRUCTIONS

Heat the evoo in a pan. Add the onion and cook until soft and starting to brown. Next add the spinach and let it wilt down. Once wilted, add the paprika, chilli flakes, the tomato puree and the water. Stir to mix and simmer for about 3 mins.

Next make two wells in the mix crack the eggs into them. Put a lid on the pan so that the eggs cook through. This should take about two to three mins. When the eggs are ready, check how much liquid is left, it should be soupy, simmer a little longer if it seems too ‘wet’. Serve and season.

For added deliciousness serve with greek yoghurt.
