Harissa Chickpeas with sticky leeks

This is a delicious warming meal with lots of spices. The sticky leeks are quick to make and give the whole dish a delicious sweetness that goes perfectly with the harissa chickpeas.

INGREDIENTS

60g houmous

60g soaked chickpeas

15g red onion, sliced

25g chopped tomato (no seeds)

85g leeks, finely sliced

1 galic clove, crushed

1 tbsp extra virgin olive oil

1/4 tsp of cumin

1/4 tsp of smoked paprika

1 tsp of tomato purée

1 tsp of harissa paste

coriander, salt & pepper

INSTRUCTIONS

Heat half the oil in a pan and add the onions and cook until the edges brown.

Next add the spices and cook for a further minute.

Then add the tomato, tomato purée, garlic and harissa paste and stir well. Add the chickpeas and leave on a low heat with a lid on, stirring occasionally.

Meanwhile, cook the leeks on a low heat in the remaining oil (lid on) for 8-10 mins.

Finally, combine the chickpea mix with the leeks and serve on 60g of houmous.

Top with coriander and season to taste.
