Spiced sweet potato lentil patties

These are absolutely delicious… easy to make and very filling for days when you need more than a salad.

INGREDIENTS

160g puy lentils

110g sweet potato

1 minced garlic clove

1/2 teaspoon of sumac

1/2 teaspoon of sweet paprika

1/2 teaspoon of onion granules

1/2 teaspoon of salt

1 tablespoon of extra virgin olive oil

Serve with a green salad, rocket works especially well

Squeeze of lime

INSTRUCTIONS

Start by cooking the lentils according to the packet instructions. Check them a few minutes before the suggested time because you don’t want them to be too cooked, you want them to hold their shape.

Whilst they are cooking, steam or boil the sweet potato until it is soft and easily slips off a knife when prodded.

Then combine all the ingredients and form into patties, I made 5.

Heat 1/2 tablespoon of extra virgin olive oil and cook the patties in the pan, they will take about 5 minutes per side.

Serve with a rocket salad with a dressing of extra virgin olive oil and a squeeze of lime juice.
