Sweet potato, kale and chickpea salad

All my favourite ingredients in a bowl.

INGREDIENTS

160g soaked chickpeas

100g sweet potato

15g spring onion

15g chopped kale

2 garlic cloves, crushed

1/2 teaspoon of sweet paprika

1/4 teaspoon of cinnamon

1/2 teaspoon of salt

1 tablespoon of extra virgin olive oil

1/2 teaspoon of apple cider vinegar

Squeeze of lemon juice

Good pinch of fresh coriander leaves

INSTRUCTIONS

Coat the sweet potato in 1/4 tablespoon of extra virgin olive oil, crushed garlic and the smoked paprika and cook for 8 mins at 180*, shaking half way through (I use an airfryer as it is so convenient but oven is just as good).

Whilst the sweet potato is cooking massage the kale with 1/4 tablespoon of extra virgin olive oil, salt and squeeze of lemon (this helps to break the fibres down a bit and makes it easier to digest).

Now mix all the remaining ingredients in a bowl, adding the sweet potato when it is ready.
