Easy pizza sandwich
So easy that I can’t even believe that I am writing this up!
INGREDIENTS - per sandwich
Sliced bread - sourdough is the best, but any will do
1 tablespoon of extra virgin olive oil
Tomato purée
6 Pepperoni slices
Grated mozzarella
Dried oregano
Jalapeno peppers
obviously anything you like on a pizza will work, I love grilled aubergine.
INSTRUCTIONS
Heat the panini maker (or toasted sandwich maker).
Spread a layer of tomato purée on one of the slices of bread. Then layer the pepperoni on. Now add a good layer of mozarella and then the oregano and the jalapenos. Drizzle over a little of the oil.
When ready, brush the hot sandwich maker with oil. Move the ‘pizza’ to the machine and top with the other slice of bread. Close the machine and toast until the cheese starts to bubble out and brown slightly. Plate up and enjoy!
